Good morning subscribers! This past weekend was a pretty indulgent one (there were burgers piled high) so when Monday rolled around I was craving lighter, plant-based cooking in a big way. In this situation, I find my dinner brain almost always defaults to some form of lentil-spinach-yogurt meal, so I figured: Why not kick off your weekly vegetarian dinner line-up with my favorite version of it? (The one below is going to kill whether you are re-righting the ship or not.) I’m delighted with the rest of the line-up, too, a mix of some newbies and old faves.
