I know this is probably your weekend for meaty Texas chili and shiny crispy chicken wings and just about everything dripping with neon cheese — and as your Weekday-Vegetarian-In-Chief — I would never take that away from you…or me! But here’s some counter-programming for you: Any vegetarian Super Bowl watchers out there? This simple, hearty Thai green curry soup is for those fans and for Monday evening quarterbacks as well, given the hearty, vegetable-packed stew comes together fast enough for any-night-of-the-week cooking. The beauty of it is that it is endlessly customizable; you can swap in rice for the noodles or broccoli for the bok choy. We like the less cloying Japanese Murasaki sweet potato, but if you’re good with the regular ones, go for it. The most important ingredient is the green curry — my store-bought picks are below, but if you want to up the authenticity quotient, you could head over to Hot Thai Kitchen (where my general inspo came from) to experiment with a homemade version.
