Oh what fun! Italy is always a good idea. Your post is taking me back to our trip to Puglia last year. My mom and I will be talking about that food and company for the rest of our lives. I ordered some giant red prawns from my fish monger, closest I can get to what we enjoyed last October with our buying a plane ticket!

I am in charge of bringing lasagna to my gal getaway this weekend and was planning to make my tried and true recipe, but this might convince me to switch it up...!

The colors of the vegetables are so pretty. The salmon and Negroni drinks and the lasagna look amazing! I love the picture of you in Italy.

Totally trying the Mortoni! Sounds delicious. Another lighter Negroni-adjacent cocktail I’m also a fan of is an Americano.

Can’t wait for your Italy recap! Wish I was there. Also - that salmon looks divine!

Parma is my favorite city in Italy! The Palazzo, the Duomo, the food...beyond amazing.

Aaahh, my family stayed right behind you last summer! The hotel is adorable - the wisteria were beautiful in August - and our apartment was a very good deal. We took my 17-year old to Angiol d'Or for his birthday dinner. Beautiful town! Wonderful food! Enjoy:)

That salmon looks fabulous as I am sure Colu Henry’s book is! Will definitely check it out! Thanks!

Italy is on my bucket list - have never been but enjoy living vicariously through others. The salmon recipe looks delicious and curious about the blood orange Negronis. I was recently introduced to a Negroni Sbagliato - replacing gin with prosecco - have you tried one of these?

Yes, I love sbagliatos, especially in warmer months. I had one in Parma last night :)

Gorgeous! Cannot wait to 1:1:1 gin : Campari : tonic with a blood orange garnish next time the sun comes out!

Green with envy. Oh, how I wish I were there....Speaking of chicory and Colu Henry, this is a gem of a salad she shared on the Rancho Gordo website (I am a fan of the bean!) and it's delish: https://www.ranchogordo.com/blogs/recipes/colu-henrys-chicories-with-tuna-fennel-and-old-school-italian-dressing?_pos=1&_sid=28e38b5f3&_ss=r....with spring approaching in NYC, I am excited for the return of Campo Rosso to the Union Square Farmers Market. Best chicories. Best produce...Speaking of you...I loved your recipe on the Rancho Gordo website. I make it all the time... posting for others to enjoy: https://www.ranchogordo.com/blogs/recipes/shortcut-minestrone

Enjoy your trip - Italy is such a special place for us foodies! Like you did a while back, I've had to significantly downsize into an apartment, and I'd love a post that talks about what you chose to keep - and what you chose to get rid of - when it comes to kitchen gear, gadgets, appliances, etc. (And whether you have any regrets about getting rid of something you've missed). I'm really struggling with this process, and I think others would also benefit from this sort of post. Thanks for your consideration!

That’s a great idea!
