I hope everyone had a beautifully chaotic holiday — here are my three favorites ways to optimize those leftovers!
1. Leftover Sandwiches
No real recipe for this (shown above), the more artless the better, and your goal should be to stuff as much of the Thanksgiving plate in between two pieces of bread as possible. About that bread: After much thought, I’ve decided the best option is a thinly sliced peasant loaf (toasted). This way you get a little of the crunch from the crust while also minimizing the starch, since you get plenty of that in the filling. Don't forget the gravy, which, as usual pulls it all together.
2. Stuffing for Breakfast (or “Thanksgiving Eggs”)
Below is an excerpt from a 2013 guest post by Maria Braeckel. Note: We’ve made this for dinner, as well.
I’ve always loved the yin and yang of stuffing’s crunchy, toasty top and its moist, gooey interior, and this recipe takes that quality to the next level. Here’s how to do it: Liberally butter a baking pan, spread leftover stuffing into it, and use the back of a spoon to make 4-6 indentations. Pop the pan in the oven at 400°F for 15 minutes. Take the pan out, crack eggs into the indentations, and sprinkle some cheddar cheese on top. Return pan to the oven until the eggs are set, about 8 to 10 minutes, and serve with good bacon and a drizzle of warm gravy.
3. Turkey Pot Pie
I wrote this recipe for Cup of Jo in 2020 because we thought it was a good way to celebrate the smaller scale Thanksgivings everyone was favoring for quarantine. But draping a puff pastry over stewy leftovers is an excellent strategy for any year. Here's the recipe.
See you next week! xoxox

Happy Thanksgiving! A little off topic but...I loaned my copy of Weekday Veg to my niece and I'm pretty sure I'll never see it again-which is totally ok-but I still want one of my own. Jenny, do you know of any bookstores that might carry signed copies? Love supporting independent bookstores when I can. Thanks!
