Thank you SO MUCH for the strainer trick!! I cannot tell you how many times I forget to reserve my pasta water, even ignoring the measuring cup next to the stove. 🤦🏻‍♀️ I'm certain I will remember it now. And adding this to our meal plan ASAP.

I had never heard of cacio before reading this, but after reading your post I went to the grocery store and bought the couple of ingredients I didn't have in the pantry and am now in love with your daughter's version of cacio. I made the full recipe and ate it for 4 days in a row and now have the constant argument with myself that, no, you cannot fix this every week or you will have no jeans to wear. I can't thank you enough for my new favorite meal!

My husband and I have worshipped you since your first book. But the trick to Cacio has sealed our love. We tried for years to get this right.

I made this for dinner last night (55 turns of the pepper mill included!) and it was wonderful. I found Abby's brussel sprouts addictive! I made delicata squash to go with it all and it was a wonderful and filling little dinner. Thank you!!

My kids also love cacio. I will try the brussel sprouts some time. But I'm with you, I make the cheesy peppery goodness in the pot, not a separate bowl.

I LOVE LOVE LOVE Cacio anything. I have not had a simple good recipe so have been buy the frozen T. Joe one and it is delicious. That said, going to try your recipe this weekend. Thank you.

Hello! I love cacio, but I've never been able to get it to work with gluten free pasta. the water you cook this stuff in has no magic properties and in fact you are supposed to rinse the pasta after you drain it. Any thoughts how to make the magic happen? can you caicio the sad gluten-less pasta? Thanks for your thoughts on this!
