Hi Jenny, Thanks for the thoughts. I live in Texas and when I moved here I committed myself to working for Democracy. So I joined the League of Women Voters, began registering new voters and wrote letters to swing states. I am still doing all that but I switched to postcards to swing states, they are easier, cheaper, and I believe just as effective. I've got 30 more to go to hit my goal of 400. Than I will start texting swing state voters and keep at it until the election. Here is the link for the postcards: https://turnoutpac.org/postcards/. Your vote matters, your freedom matters!

I am finishing first 100 of 400 postcards from VotersInSwingStates.

Wrote with PostcardsToVoters during last administration. Highly recommend both.

Thanks for sweet potato recipe. Missed it the first time around xo

Thank you for this, Jenny! Your post was the one that pushed me to donate to WCK in the name of our fellow humans in North Carolina. And I'm right there with you on Vote Forward, deep into my stacks of letters. We are all in this together. Valerie

Thank you for your great resources and comforting thoughts. I love roast chicken and think the aroma and presentation of a whole roasted chicken for entertaining is amazing…until you start to carve it. It’s ok for family, but for company it’s a different story. Carving at the table is disastrous, and carving it to put on a platter just looks sloppy and not impressive, esp for “weekday vegetarians” if you know what I mean. Any suggestions for presentation for entertaining? Thank you.

Thank you for the recipe and letter writing inspiration! I live in a midwestern swing state and was encouraged to canvas. For those of us that live in these states, canvassing for a few hours a week has been shown to make a meaningful impact.

Hey Jenny, I wanted to share that I cooked a first recipe from your new book last night. I made the edamame, tofu and snow peas salad. My husband and I had it for dinner last night and I just wolfed down the left overs when I got back from the gym this morning.

I would never think to make a dressing with that small amount of mayo and a bit of chili sauce and mustard and honey. It felt like a curious mix of ingredients in the dressing - but wow that dressing slaps.

I'm excited to try more from your book soon - though really I just want more of the edamame salad! I am working with a nutritionist to eat more protein and I am so sick of the shakes and yogurt all the time - this is a great new option.

Thank you for lifting up WNC right now! Its my home and we need all the support we can get right now because the loss has been immense and the recovery will be long. I know Equal Plates and WCK are doing amazing work across the region, too. Thanks again!

Good to hear you’re doing VoteFwd letters, me too. Hope all the postcards and letters people are writing make some bit of difference! And those potatoes look yummy, they remind me of the kumara type of sweet potato you find in New Zealand.

It means so much that you shared resources to support Hurricane Helene relief efforts in Western North Carolina. I live in Asheville, NC, we just got back power and internet. It looks like water may be “weeks away.” Equal Plates Project and World Central Kitchen are two incredible orgs, one local and one international, supporting our recovery. It’s going to be a long road and your support is greatly appreciated! Xo

In most recipes for roasting there seems to never be a mention that should the roasting be with the lid on or off. Thank you

For this roast chicken recipe (and I would presume for the majority of roast chicken recipes), you do not cover the chicken with a lid or foil or anything...
