I repeatedly add the end of various pickle jars - some spicy! - to one jar that my daughter now calls my Chaos Vinegar. It is fantastic for a sip and now I’m going to try it with gin!
I have made this with any of the white beans from Rancho Gorda and it always comes out great. Cooking times are longer for the bigger beans like Royal Corona. Really a spectacular meal for such a small amount of work.
I'm no vegetarian, but I keep bumping into the idea. And I am curious. Can you recommend just one dish I should try/food I should buy to introduce me to its wonders?
Lauren Fleshman is on Fresh Air today. Just thought you might like to listen. Thanks!
I do! Thank you!

CHAOS VINEGAR. I love that!
Chicken and vinegar is a classic Lyonnaise preparation and Jacques Pepin has a fabulous 4-minute video that I saw on facebook (you can google it but there are several so you have to choose the right one: https://www.facebook.com/ChefJacquesPepin/videos/good-morning-here-is-a-chicken-with-a-vinegar-dish-from-my-hometown-of-lyon-in-f/767786963763917/). It's delicious and fast for work nights, but BTW I sub in tomato paste for ketchup.
Re the beans with burrata...( I own your book)...I don’t like limas at all...what other kinds of beans could I use? Thanks.

that's a big ask! but I guess the one that's on the cover of my book: http://www.dinneralovestory.com/braised-beans-with-burrata/
My oh my! That's a big answer!
That essay!!! Wow, so good. My daughter is a swimmer and so much of this is relatable in her sport as well. I had to share with her.
I've attempted dirty martinis with leftover pickle juice. I'll have to try gin.
Jenny always has the wins!
