I just love the barley soup with your Mom. I was at my mom's house yesterday watching her cut an onion with a knife I recall from my childhood. I was horrified she was still using it...ha! I had bought her new ones years ago, but I guess she goes with what she knows. That will probably be me one day and my daughter gasping at my knives.
Yes, comfort in familiarity. I'd suggest just bringing a knife sharpener next time, but if her knives are like my mom's knives, they are beyond salvation! :)
I laughed out loud when I read the comment about your Mom's knives. My mother has also been an excellent and avid home cook for my entire 49 years of life but her knives are ALWAYS dangerously dull. I have no idea how she cuts anything. Could it be a generational thing?
I doubt that it's generational. My kids tease me because I have so many knives and all of them very sharp. It appalls me when people don't have good knives. Guess what my children and grandchildren often get as gifts. I must admit that my arsenal of knives has one missing, a fileting knife. I just haven't often needed one.
I know this has been discussed ad-nauseam, but to me they have and will always be black-and-white cookies, and it brings me wistful memories to hear it now that I live further upstate where they are referred to as “half-moons”.

My mom’s knives are horrendous, too!! I think it may be a thing - mothers’ bad knives.

I have taken to using fire-roasted diced tomatoes when I make the Crunchy Cheesy Bean Bake. It adds a nice bit of depth to the flavor.
