i mention this because i have made them ever since (when i don't do regular smash burgers) and they are SO GOOD. you wouldn't think this many onions would cook or be good, but they do and they are.

Those yogurt flatbreads look fantastic (and the grill grates are sparkling clean! Is that the secret to not sticking?!), but also: Abby’s romper in Sicily is amazing and I’m taking notes.
definitely brush the flatbread dough with oil, that is mostly the trick, but we JUST replaced our very old rusty grill grate last week, which is why it looks so sparkly and new.
