Husband went nuts on our little garden, so we have about 200 basil plants. Am giving it away to friends. And make lots of pesto. Will make the avocado-basil dressing....and maybe put it over some little potatoes? Or just eat it with a spoon? I make a potato salad with little potatoes, green beans, red onions, a little garlic and basil, with a mustard vinaigrette dressing. Off to cook!
Look into making the Turkey & The Wolf tomato sandwich -- it uses a lettuce-amount of basil as well as sunflower seeds. Best version I think I've ever had!
I bought your Vegetarian cookbook as my teenagers who blaim my generation for soley causing climate change do not accept a meal without animal protein as constitutinig dinner. They will feign their noses up in disgust. So I tell them they can cook their own dinner, and their response is, "It is your responsibilty, why did you have us if you are not going to do it". So far we have only made gains in the tacos domain, however we used to live in Denver, so tacos anyting was usually on the menu weely, but I had clients who made the tortillas so always had them, cheap and goodd quality. I took a No-Plastic Initative in 2021 and that works as I buy all the "stuff" in any category that comes into the home. My girls are away for a few days. As all parents' know that can be heaven, and I celebrate by not cooking at all.
isn't it wild that grilling is considered an almost exclusively summertime activity? thankfully i have other people in my life that are seemingly unbothered by standing over a fire in the blazing heat, but yikes. and thank you.
conversely, maybe this depends on the layout of where you live and whether you have a/c but...when it's really hot i use my oven way more. this is because my kitchen has no a/c and standing in it for any length of time means sweating and misery. but if i can throw a dish into the oven and then leave to sit in the air conditioned living room until it's done, that's the move.
re: potato salad - this is the classic for me, and beautiful too:
i'm a potato salad fiend and am happy to mention the same one over and over or to get recipes for new ones! they all look amazing. personally would not eat something loaded with poppy seeds at a group outing because i'd know they'd be stuck in my teeth, but i bookmarked that one to make at home where, frankly, i don't care what i look like - especially in this heat, lol!
Don't underestimate the power of canned potatoes for things like the nicoise salad... there's a real reason why there were two recent treatise on the subject from two major food pubs! I will forever and always keep them on hand now.
