I made this chicken recipe last night using tenders (no breasts in the house), and it was AMAZING! The secret for me was this line: "Let them sit undisturbed..." I am not good at letting anything sit undisturbed, so I set the timer and walked away until it was time to flip. Voila, perfectly cooked chicken!

King Arthur parchment paper sheets are the most worthwhile splurge in my kitchen. I, too, am a fan and a believer in both parchment and deconstructed meals. You hit the nail on the head - everyone can get just what they want and everyone is happy with no more work on my part.

Before anyone comes here and starts in on you for being wasteful by using parchment over Silpat, I am here to defend you 10000%. Silpat does not work in all applications, I am sorry. It feels greasy no matter how it is washed, and I do not trust whatever is likely leaching out of it into my food. Parchment paper all the way!

I love parchment too, but don't be like me and mindlessly put it under the broiler (unless you want an excuse to test out your fire extinguisher)...

I discovered those glasses 5 years ago when my husband did an Ironman in Cambridge, MD (and I drank several beers throughout his race day while I was cheering him on/waiting for him) and they have been a favorite ever since! I much prefer them to a thicker pint glass for a draught beer - I like the thinner lip and the way they feel in my hand.
