Question: for the crustless quiches, did you follow the recipe in your book and just bake straight in the dish with no crust? Or do you have other tips to convert the recipe to crustless? Thanks!!
Yes, that's what I did, and weirdly they came out a tiny bit watery, which is strange because that recipe has never failed me before. To be safe, add an extra egg yolk or whisk in a little flour to the mixture. Otherwise, delicious!
