Thoughts about doing that mouthwatering polenta without turning on the oven? Maybe lightly sauté the corn kernels first and then eat it right away so it doesn’t have a chance to cool?

yes, you can skip the oven part. I just like to get it firm and bubbly on top, but it's not necessary. Just let the polenta sit on the stovetop uncovered for about 5 minutes, to allow it to thicken a bit.

Wow, all of this post could not be more perfectly timed. The top photo, exactly what I'm craving now. That corn and basil polenta on a cast iron pot on a stump mirrors the story of my casual summer. But this closing advice, as a parent of two very active kids ages 9 and 13 leaning hard into big struggles and small triumphs in their sports this summer, is gold. Bookmarking this forever.

Ah, yes, Tomato Sandwich season is also one of my favorites. As a gluten-free family, I make bread especially for the occasions and enjoy this immensely. Thanks for sharing your insights.

So agree! We had 2 naturally talented daughters in running who ran in college and still run today every day because they still love it!

God gives the talent or ability and we steward it or not….

About raising an athlete-- spot on! my son just left for his freshman year to play soccer for his college. He worked so hard to earn his spot on the team, and everything that was said there I believe he (we) accomplished. It is great advice for parents with younger children! Biggest takeaway-- let them learn from their own mistakes, & repetition repetition repetition!

I love those dos and don’ts for parents! Used them for my son when he was young and now when he’s a young man. Need to use them for myself too.

Question: Can I use cornmeal for polenta?

Just to say I made the cheesy, fresh corn polenta last night for dinner (with sausages and broccolini) and it was SO UNBELIEVABLY GOOD. Amazing! No notes! Delicious! Thank you!
