Colorado isn't known for its restaurants (though Denver and Boulder try) but Golden, CO has the BEST pupusas at El Callejon on Washington Ave (our main street). They also make the freshest guac and guava juice. Only open for lunch. If anyone is passing through Colorado, it's worth stopping in Golden for a walk along Clear Creek and a pupusa.

I love that you're highlighting pupusas here, and that you enjoyed them so much! My husband is from El Salvador and we actually just got back from a week-long trip there to visit family and we had MANY a pupusa while visiting. From the photo you posted though, it looks like you committed a cardinal sin: you are NOT ALLOWED to eat pupusas with a knife and fork! Finger food only :) Buen provecho!

Haha, I'm sure he did! Next time, I recommend the cheese and loroco filling if you can find it - loroco is an herb similar to a spring onion and it's my favorite kind of pupusa!

Yes, I have a wonderful cookbook called Latinísimo and they talk all about loroco, how it's the magic ingredient...why most people can't replicate pupusas authentically at home. But this is why I moved to New York right? Loroco has to be a subway ride away and I'm definitely going to try to track it down and make my own. The ending to Long Island really stuck with me, too! If you haven't read Nora Webster... it's sort of a satellite story to Brooklyn, a bit quieter but also so good.

I downloaded Nora Webster as soon as I read the review that mentioned Eilis's mother made an appearance in it. I do hear it's his best novel, so I guess this is the summer of Colm Toibin.

Ooooh my. I just made the mud cake. I’m not trying to be dramatic and say it’s changed my life but also … ?! THANK YOU for sharing such a beloved recipe that has heralded years of life and celebrations! This is a gift that will keep giving — can’t wait to pop some over to my neighbours now!
