New subscriber here! I’m really enjoying your newsletter, and love your “succession sofa suppers” idea :). I’ve been in my kitchen developing a simple vegan dish that would make a great sofa supper—only one bowl one utensil needed. Sautéed onion & garlic, tomato paste, large bunch of kale, 1 can (drained) chickpeas, juice from 1 lemon, salt, pepper, paprika to taste. Top with sliced apples (bc I have an over abundance from the apple orchard). So quick and tasty 😋
I tried your tofu method when I got The Weekday Vegetarians and, while delicious, mine wasn’t as crisp as it should be. I clearly did something wrong or in the wrong order. Can you be specific on exactly how you do it?
tonight we're having chicken parm, because the other night i made these AMAZING sandwiches based on an instagram post i saw from action bronson this spring (mine had: crispy chicken cutlet, spicy gremolata, fresh mozzarella, lightly dressed baby kale on a scali bread style roll) but i underestimated how filling they would be and had several cutlets leftover. something about chicken cutlets just puts me in italian mom mode (even though i am neither) and i end up making a downright comical amount of food for two people.
anyway, will throw together a caesar salad to go with and have sofa supper in front of the newest episode of lower decks, probably. (want to catch up on riverdale but both of us hate all these corny musicals they keep doing.) we eat every meal on the couch - but at the coffee table so we have the benefit of the surface so meal options are unlimited ;)
This tofu changed our meals!! We add it to everything, but mostly serve with brown rice and veggies and with the whole foods miso sauce you suggested long ago, when we can find it.
Home from a road trip to Oregon and making lamb curry with the Kashmiri Curry simmer sauce from Maya Kaimal. I brown the lamb, add a sliced onion and then top with the simmer sauce and add a cup of water from the jar. I let it simmer in the background while the rice cooks. My littles gobble it up (by some miracle!). Easy and warming.

Possible to use a silicone baking mat for roasting the tofu or does it need to be parchment. Thank you!
