HI Jenny. This chicken is great and I've used this recipe a couple of times when the host asked me to bring roast chicken for various holidays. My chicken didn't look as nice as the photo so I used my broiler for a couple of minutes to brown the chicken.

Hi Jenny, I've been a fan for years though my kids were out of the house by the time I read DAL. You echoed what had been a priority for me when my kids were younger - family dinners. And then with How to Celebrate Everything, you touched on my love of rituals and traditions. I have adopted meat-free weeknights for the last 15 months, and it's gone well. Here's a " project" I began several months ago ( in the same vein of not wasting things), I've made it a priority to use up those items in my fridge and pantry that I bought for recipes years ago - the half jar of sorghum, the few tablespoons of mango chutney, the Calabrian peppers, the partial jar of sub sandwich dressing. Usually, it's just a matter of being mindful that they are there, and adding them to a recipe. My pantry is somewhat less cluttered, and the project continues.

I saw that picture of the chicken and got all excited that it was a chicken and artichoke recipe at first :) It looks delicious but I just can't get into fennel.

Also, my pregnant self is so jealous of your cocktail!

All I’ll say is that this is the recipe to get you to like fennel. Congrats on the pregnancy!
